Decelerating weight loss of harvested strawberries by applying edible coatings based on starch-protein hydrolysate of Amaranth flour
نویسندگان
چکیده
The work studied weight losses of harvested strawberries provided with protective edible coating. Coatings were produced by dipping strawberries in 50 % (w/w) starch-protein hydrolysate of Amaranth flour. Tests investigated influence of added glycerol (10 or 30 %) and dialdehyde starch (1 or 4 %) on barrier properties. A protective film was produced on the strawberries after drying 5 min. at 23, 30 or 40 oC. Strawberries were stored at 7±1.5 oC or 23±1.5 oC. The lowest losses in mass caused by humidity evaporating were provided by a protective coating produced with 30 % added glycerol at both storage temperatures.

Effect of Composite Edible Coating from Amaranthus Cruentus Flour and Stearic Acid on Refrigerated Strawberry (fragaria Ananassa) Quality
−− A composite coating from Amaranthus cruentus flour and stearic acid (10 g stearic acid/100 g flour, 26 g glycerol/100 g flour and stirring speed at 12000 rpm) was applied on fresh strawberries in order to verify the effect on its quality. Other treatments were effected to comparison: PVC film, bilayer coating of the optimized formulation, optimized formulation without stearic acid and a cont...
متن کاملShelf-Life of Apples Coated with Whey Protein Concentrate- Gellan Gum Edible Coatings
ABSTRACT: Edible coatings made from whey protein concentrate (WPC) and gellan gum (G) were investigated for their capacity to preserve the quality of Malus domestica cv Golab apples. WPC and gellan gum coatings at different concentrations plasticized with glycerol (Gly) were tested. Postharvest storage quality condition testes included weight loss, color and texture changes, titratable acidity ...

Postharvest life of strawberry fruit is very short due to humidity and high metabolic activity. In order to extend the shelf life and quality of strawberry (cv. parous), effects of pectin coating enriched with different concentrations of lemon and orange peel essential oil were assessed at 20˚C for 6 days or 5˚C to 12 days. The experiment conducted based on a complete randomized design (CDR) in...

The effect of whey protein concentrate based edible coating incorporating different concentrations of natamycin and lysozyme-xanthan gum conjugate on ultrafiltrated white cheese shelf life was investigated. Escherichia coli O157: H7 (as an indicator for gram negative bacteria), Staphylococcus aureus (as an indicator of gram-positive bacteria), and Penicillium chrysogenum (as a mold) were inocul...
متن کاملImproving Shelf Life of Strawberry Through Application of Sodium Alginate and Ascorbic Acid Coatings
In the present study, effects of edible coatings using sodium alginate (SA) and sodium alginate in combination with ascorbic acid (AA) on the shelf-life extension of strawberries at 4±1°C was studied. A factorial experiment was performed based on a randomized complete block design with four replications. The treatments included control (distilled water), SA (1%, 2%, 3% w/v), SA in combination w...
